Grilled Flank Steak

I love making this flank steak recipe because I feel like I barely have to lift a finger when dinnertime rolls around.

I prepare the marinade the night before, which takes about 5 minutes to assemble. Then, a half hour before dinnertime, I start making the side dishes.

I drizzle olive oil on some asparagus, sprinkle it with salt and pepper and put it in the oven to roast. Easy, peasy.

While the asparagus is in the oven, I measure some rice and water and put it in my rice maker and let the appliance work its magic.

Then – and this is the sweet part – I tell my husband that he is on grill duty. I put my feet up and flip through a magazine while I watch him pop in and out of the house repeatedly on his way to check the steak.

OK, the magazine-reading part is just a fantasy; I’m usually tending to kids or folding laundry during the “free” time I have while this dinner basically cooks itself. But it feels like a mini break whenever we have this simple dinner.

I haven’t even gotten to the very best part yet – this grilled flank steak is delicious! Everyone in the house loves it and there is never any left over.

So, go easy on yourself and make this quick flank steak. Here is the recipe, which is slightly adapted from food.com.

Grilled Flank Steak

(Serves 6)

Ingredients:

3/4 c olive oil

2 TBS Worcestershire sauce

1/2 c soy sauce

1/4 c red wine vinegar

2 cloves garlic, minced

1 tsp dry mustard

2 TBS lemon juice

Directions:

1. Combine ingredients.

2. Marinate overnight.

3. Grill until it reaches desired temperature.
