Sour Cream Strawberry Pie

Spring has finally arrived (amen!), and our garden has started producing lots of strawberries. The other day, I started to think of ways in which we could enjoy them (besides straight off the vine, of course).

I rummaged through my ancient green recipe binder and found a recipe for Sour Cream Strawberry Pie that I’d forgotten about for years. With only FIVE ingredients, I thought would be a cinch to make. I dusted off the recipe and gave it a try.

I’m so glad I did.

Not wanting to take the time to make my own pie crust, I used a refrigerated store-bought one. After that, I sliced up strawberries, covered them with a mixture of sugar, flour, and sour cream, then sprinkled more sugar on top. E-A-S-Y!

With the flour/sugar mixture on top and the crust on the bottom, this dessert seemed like a cross between pie and cobbler to me.

Whether or not you call it a pie or a a cobbler, I’m pretty sure you will call it delicious.

Sour Cream Strawberry Pie 

 
1 (9″) refrigerated pie crust (or make your own)

1 1/2 lbs strawberries, halved (or quartered, if they are large)

1 1/2 c sugar

1 c all-purpose flour

1 c sour cream

2 TBS sugar

DIRECTIONS:

1. Preheat oven to 450 degrees.

2. Unroll pie crust and press into pie pan.

3. Place strawberries on pie crust.

4. Mix sugar, flour and sour cream. Place on top of strawberries.

5. Sprinkle with sugar.

6. Bake at 450 degrees for 10 minutes.

7. Reduce temperature to 350 degrees and bake for 30 minutes.

  1. Christine, have you tried making this pie with frozen strawberries? Thank you!

    • I have not. Personally, I’ve never had good luck using frozen fruit when baking so I stick with fresh fruit. If you try it using frozen strawberries, let me know how it turns out!
