“THE” Dinner Group Salad

Whenever I have a dinner party to go to, I’ll ask the hostess what dish she would like me to bring. Most of the time the response is, “Could you bring the salad?  You know the one – THE salad.”

THE salad doesn’t have an official name, but it consists of baby greens topped with dried cranberries, toasted pine nuts and crumbled goat cheese and then tossed with a vinaigrette.

The recipe was given to me by a family member who is a phenomenal cook, and it has been served to both gourmands and meat-and-potatoes eaters alike, and is universally enjoyed.

“THE” Dinner Group Salad

Ingredients:

  • 1 c canola oil
  • 1/4 c distilled vinegar
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1/2 tsp celery salt
  • 1/4 tsp cayenne
  • 1/4 tsp dry mustard
  • 2 cloves garlic, minced
  • Dash tabasco
  • Dried cranberries
  • Goat cheese, crumbled
  • Pine nuts, toasted (*watch these closely while they are toasting, as they can burn quickly)

 

Directions:

1. Combine dressing ingredients (vinegar through tabasco), cover and shake.

2.Toss with baby greens, dried cranberries, toasted pine nuts and crumbled goat cheese and serve immediately.
