Baked Pumpkin Spice Donut Holes

I have to admit that I was a bit intimidated by the word “donut” in this recipe. I’ve never made donuts before; I’ve always left that to the professionals at places like Dunkin’ or Daylight.

Oh, and I don’t own a deep fryer so that makes traditional donut-making a bit challenging.

But two other words in this recipe piqued my curiosity enough to overcome my donut-making intimidation: baked and pumpkin.

So maybe I don’t own a deep fryer, but certainly I know how to bake things in the oven, right? Plus, I am always seeking out new and different ways to use pumpkin in recipes, especially in fall.

I decided to try this recipe, and I sure am glad I did. My entire family devoured them in one day, including my husband who doesn’t really like pumpkin.

Now, these donut holes are actually baked in mini muffin tins, so they are not perfectly round like you’d expect when you think of donut holes. If you want to them to have a really round shape, after taking them out of the oven, you can let them rest for 2 minutes and then carefully try molding them into balls.

I tried doing this on two of mine and they both crumbled, so I left the others just the way they were after they came out of the tins, which I think turned out okay (as you can see).

These delicious morsels are a cross between a muffin and a donut, and have a light, sweet cinnamon taste.

  1. Preheat oven to 350 degrees and grease muffin pans.
  2. Whisk together flour, baking powder, cinnamon, salt, nutmeg and pumpkin spice.
  3. In a separate bowl, mix the pumpkin puree, vegetable oil, milk, brown sugar, egg and vanilla extract.
  4. Combine all ingredients together to create the dough.
  5. Spoon batter evenly into prepared pans.
  6. Bake for 10-12 minutes or until you test with a toothpick and it comes out clean.
  7. Allow donut holes to cool for 2 minutes.
  8. For the donut coating: Melt the butter in a bowl. In a separate bowl, combine the cinnamon and sugar.
  9. Dip the donut holes in the butter and then roll them around in the cinnamon sugar.
